Words to live by.... 1

While in Florence / Tuscany, I had the opportunity to share many restaurant meals with Francesco Cappelletti, owner of Signoria di Firenze (see posting below).

As a gourmand and frequent restaurant visitor, Francesco shared these words of wisdom regarding restaurants:

"The staff must either be professional or they must be warm, friendly and welcoming. If they are neither, the restaurant is no good."

The remains of our delicious Tuscan lunch where the staff is warm, friendly and welcoming!

Not much to look at from the outside, this favorite of Francesco's is just a five-minute walk from the factory. It serves down-home Tuscan food and their specialty is ribollita a white Tuscan bean soup poured over sliced bread.
